40loaves

Bread no. 1 : a slightly modified version of this recipe.

Adjustments : I used two cups white flour and one cup wheat. Instead of mixing everything together all at once, I mixed the water, yeast and sugar together and allowed that to bubble for about five minutes before adding it to the rest of the dry ingredients and the olive oil. I substituted kalamata olives for black olives.

Notes : this was my first time creating steam in the oven by heating up a tray of water. This made crust of the bread dark brown and crunchy and kept the inside nice and soft. Awesome result but I set off the fire alarm three times from having the oven so hot.

Review : I'm a fan. Especially when it's dipped in a bit of olive oil or topped with a slice of cheese.

    I hear you with the smoke alarm! I got Peter Reinhart’s “Artisan Breads Everyday” for Christmas and the first time I actually baked bread from it (French batards) our smoke alarm went off about four times. Funny thing is that I happened to be skypeing with the folks who gave me the cookbook while baking the bread and had to keep running away to wave towels below the smoke alarm. Nonetheless, it’s the BEST bread I’ve ever made!

    I have used the water trick before, too, and it seems to work well. I use a disposable roasting pan. This looks yummy – I will have to try it out!

    We are only eating bread we bake this year so nothing else comes in : bagels, rolls, anything. I would like to replace cereal with bread too. well see.

    This loaf I actually made by hand. But I have a Kitchen-Aid mixer in yellow and think it is totally worth the cost. It was actually a wedding gift and my favorite by far.

    Love this and I love olive bread! Make sure to take a photo of each of your 40 loaves.

    oh man, see if only we lived closer…my leftovers from ravioli filling (mushrooms, spinach, ricotta, parmesan, garlic) would be perfect spread and toasted on top of a slice of your bread. plus, i am home all week so we could hang out AND eat our delicious creations. looks lovely, miss you.

    Wow! I admire your ambition – I could never do that. There’s a little deli near me that sells the best bagels, amazing tortillas at the farmer’s market, etc. I’m a sucker for good bread! (Not that homemade bread isn’t good bread but there’s too many options out there!)

    Totally love your personal challenge on 40 loaves and good job for doing it. i have saved all your recipes you called amazing so looking forward to trying them out. will be checking in to see if you do any more projects.
