I was recently contacted by Got Milk? to see if I was interested in partnering with them for a blog post.

Considering that milk was such a huge staple of my childhood (like a totally normal person, I collected Got Milk? mustache magazine ads in a binder) and because every member of my family drinks milk every day, this was a no-brainer for me. I was raised on glasses of milk. From age 1 to 18, my brother and I had milk with our dinner every single time my family sat down at the table (so six of seven nights a week). When I go to Sacramento to visit my parents, they pour my glass of milk without asking. (And I drink it without compliant.)

"Drink you milk" was part of the chorus I heard growing up. (Along with "do your best," "take the laundry upstairs" and the Full House theme song.) If I do my job right, it will be part of Ellerie's as well. (Along with "finish your Harry Potter," "bring in the backyard tomato harvest" and "do you want to go craft supply shopping?")

Anyway, I'm excited to share one of our favorite whole wheat waffle recipes with you today. We eat cereal and milk for breakfast most mornings, but on weekends, we get a little more exciting (you can see our pancake recipe here) and sometimes that includes waffles (made with milk, of course).

This recipe makes three dense (and delicious) waffles, feel free to increase it to fit your needs.

  • 1 egg
  • 3/4 C wheat flour
  • 1/4 C white flour
  • 2 Tbsp wheat germ
  • 1/8 tsp salt
  • 3/4 tsp baking powder
  • 3/4 C milk (we used whole milk)
  • 1 Tbsp honey
  • 2 Tbsp butter (melted)

Separate the egg. Set aside the yolk (to be used later) and beat the whites with a hand mixer until stiff.

Combine the dry ingredients in a large bowl.

Combine the wet ingredients. I like to beat the egg yolk then mix with the melted butter and honey before adding the milk.

Mix the wet into the dry and stir just until you can't see dry ingredients anymore (do not over mix).

Add in your strawberries (or other fruit choice).

Fold in your egg whites. This is what will keep the waffle more on the light and fluffy side (again, take care not to over mix).

Pour the mixture into your waffle iron (we have this one). This is a thick batter and you can sort of scoop it into place. Follow the cooking directions according to your waffle iron.

Strawberrywaffles

Serve right away…ideally with whipped cream and more fruit! Since I had the hand-mixer out for the egg whites anyway, I decided to make up some whipped cream. I combined 1/2 C cream, a dash of vanilla and 1tsp sugar and whipped until it was the right consistency.

So good. And as far as sweet breakfasts go, these are pretty healthy and properly filling (we're not all starving again at 10am). All three of us are fans (though Ellerie perfers that hers is broken into bite-sized pieces).

    I was raised on milk, too. And, no BS, I also collected “Got Milk?” ads…I mean, that campaign was pretty genius and it was EVERYWHERE…FOREVER!
    I still drink a lot of milk. Like, A LOT. Like, I buy 4 gallons of it a week to split between me and two toddlers. Apparently drinking that much milk is weird to most people, because even my girlfriend looks at me weird every time I pour another glass. Ha!
    We do pancakes-from-scratch pretty regularly in our house (usually for dinner, actually…with sliced fresh strawberries and sprinkles on top, of course), but I’ve never tried my hand at making waffles that don’t come out of a big yellow box. This recipe, however, looks on point. Definitely going to be trying this one!

    I’ll do you one better with the milk ads, which I also collected: when I was about 14 or so, my aunt and I actually bid on a lot of milk ads on EBay. There were, of course, super rare ones that never made it into the magazines I read at the time. We lost, but man, it was a little crazy there with the milk ads for a second.

    Oh my gosh–I was a Got Milk girl for Halloween one year. I used a white eyeliner pencil to chalk in the ‘stache! The ironic part is that I am not a milk drinker at all! (Go almond milk!!)

    Once, we were driving from Florida to Tennessee. I knew that I was in Tennessee when we stopped at a fast food restaurant and I asked them if they “got milk” and the server said, “You want that in a cup with ice, darlin’?”

    I am a huge fan of milk. We go through it like CRAZY around my house. We go through at least 2-3 gallons of milk on a weekly basis for just my boyfriend and I. We’re also BIG fans of waffles, so we’re definitely eating these this weekend.

    I love how you make these posts so authentic. It’s so true about milk though. My fiance still pours me a glass while he sets the table, even though I’ve told him a thousand times it just does not go well with wine.

    I do not drink that much milk, but my son drinks a TON. In fact, other than water, it’s all he will drink. We (a family of 3) go through a gallon and a half a week. More when I up my consumption.

    I have a 3 year old and a 15 month old, and we drink a LOT of whole milk – usually 1.5 gallons or more a week – with all of the drinking, cooking with it, etc.
    Luckily, Costco sells organic milk – Three 1/2 gallons for about 10 bucks – a lot cheaper than the grocery store!

    These look delicious, I love waffles.
    Check out recipes for liege waffles. Had some recently at a local flea and it was a game changer. They used balls of dough to make them and the taste was out of this world. Going to try to make some at home after I order some Belgian Pearl Sugar (in the recipe).

    I think it’s kind of funny that you rarely do sponsored posts and in this post it doesn’t mention the name of the sponsor. I’m guessing it’s Got Milk? Or the Milk Council?

    We just made these and they turned out great! My toddler wouldn’t let me add the fruit inside 😦 but she was very excited to help whip the egg whites, which was a new trick for her. What does the wheat germ do? I didn’t have any and just threw in a little extra flour…
