pizza no. 18 : chorizo & jalapeno.

occasion : it's a last hurrah before I try a semi-paleo-inspired diet (I'm currently attempting to go without or with just a little bread, pasta, sugar, cheese & peanut butter).

crust : our whole wheat usual.

sauce :  enchilada sauce from trader joe's.

cheese : yellow and white cheddar.

toppings : grilled onion, chorizo, sliced jalapenos, fresh garlic & salsa.

thoughts : we recently went out to dinner and tried a very similar pizza. Both of us were excited to replicate it at home. It's a pretty easy one to throw together because you don't have to "make" anything. The sauce is in a jar & the chorizo is pre-cooked so really you just need to build this one. We put the enchilada sauce down first, then the cheese then the toppings. The salsa was a fresh one from the deli section at our local market and we poured a bit of that on top. Awesome spicy flavor to this one. It might be my new favorite.

    I always read your pizza posts and think “I could do that for us” then I think of my 3 kids and how many pizzas I’d have to make and I get too tired! Maybe in 12 years when it’s just me and the hubby. Now I’m depressed because I don’t want to wish those years away. Okay, I’ve convinced myself to just make the pizzas!

    I have two kids (7 and 2) and they love making pizzas with me. My husband is the expert dough roller, so everyone gets in there. And the two year old LOVES dumping ingredients in the mixer. It’s not as exhausting if everyone helps, and it’s so fun all together!

    I do love pizza too, you should try with frankfurt and mustard as toppings, or morcilla and salmon…

    Yum. I totally want to make this (without the chorozo). The enchilada sauce and spicy stuff sounds so good. I love making pizzas but usually do regular mozz and tomato. I did male paneer pizza the other day that was insane. I think you would love it!

    I agree with the others, do it. I have 3 kids. I made the dough in the bread machine and roll out individual pizzas. Everyone makes what they like and we have leftovers for lunch the next day.

    yum!! have you tried making pizza crust from cauliflower? you can find a recipe easily. it does have a little bit of cheese, but it is delicious & you don’t miss the flour at all 🙂

    Awesome. I’ve been thinking of going semi paleo as well. It’s just… the cheese. I just can’t without it. Oh well. I haven’t tried that macadamia nut “cheese” people keep recommending.
    Will you follow the same diet you were on before you had Ellerie? I remember that had tons of nuts, didn’t it?

    Love the pizza, looks delish. I also consider myself semi-paleo, I eat potato, rice and a bit of sugar and for ease will sometimes eat gluten free goods. I know so many people say gluten free is a fad, but really, cutting it out has made such a difference to me!
    Anyway, I just wanted to tell you to check out Marks Daily Apple blog. He calls himself primal rather than paleo and has a brilliant philosophy on life – your two blogs are the only ones I make sure I visit daily 🙂

    I’m so glad you are back to posting the pizzas!! I was in Whole Foods on Friday after reading this and ended up getting one of their “take-n-bakes” because it made me so hungry for pizza. 🙂 For the record, Whole Foods has excellent to-go pizzas that would be great to “copy”… we had a pesto sauce pizza with spinach, mushrooms, tomatoes and blue cheese. YUM. But this still looks more tasty!! TFS, can’t wait to see your next one. 🙂

    mmm! Looks so yummy! Pizza is definitely one of those things I need to indulge myself in making more often. This chorizo one sounds perfect cause some spiciness can definitely make a big difference between good & great!
