pizza no. 15 : enchilada & carne asada.

occasion : it's Monday night and Paul is home from deployment for good.

crust : our whole wheat usual.

sauce : a pre-made enchilada sauce we picked up at Trader Joe's.

cheese : cheddar & havarti.

toppings : onion, tomato and grilled carne asada (we picked ours up pre-marinated in the deli section of our local grocery store then BBQed it the night before).

thoughts : we are SO back on the pizza making train. Paul is home. Dinners have to be made. I can eat carbs. The summer light is perfect for evening photographs. Looking forward to sharing more and more pizzas here. This one was amazing and so easy because the sauce came ready to go and the meat was leftover from the night before.

    I’m excited to see pizzas back, not only because the pizza ideas are good, but because they’re so representative of PAUL IS BACK!!!

    Elise, I LOVE the idea of the pizza project. Would you mind terribly if I started one of my own?!?!
    This one in particular looks amazing. I’m beyond impressed that you’re making pizza with a newborn. I remember it taking me much longer to get back into the swing of cooking anything beyond the bare basics after having my children.

    Last night I made also Mexican pizza but I used tortillas instead of dough. I brushed a little bit of olive oil on it and then I put pizza sauce, beans, onions and cheese on it. 375 F for about 6-8 minutes…a good alternative if you don’t have the time to make a dough. Pita bread is also a good alternative to regular pizza dough.

    I love the little Ellerie pic on the sidebar – I love the pizza post too but I nearly did a double take when I saw it because I was hoping for a Dear Ellerie letter 🙂

    Love the pizza inspiration! Was the cursive writing on photos done with an app, font on computer or freehand? Love reading your posts and reliving life with a baby again. So wish I had recorded all my thoughts at the time. Thank you for bringing the memories back!
