There has been a bit of pause between pizza posts! I assure you, we've been making and eating pizzas, but the low light in the evenings make them tricky to photograph. Please excuse these awful photos and read below for a great pizza. 🙂

pizza no. 13 : meatball pizza.

occasion : it's Tuesday & we had spaghetti and meatballs last night.

crust : our whole wheat usual.

sauce : red tomato sauce of Paul's concoction (I've shared this before, but here it is again) :

  • olive oil
  • 1 large garlic clove – minced
  • 28 oz can of whole peeled plum tomatoes
  • pinch of dried rosemary, basil and oregano
  • salt & pepper to taste

Saute the minced garlic in olive oil over medium heat. Add the tomatoes (crush them up with a wooden spoon), dried herbs and a bit
of salt and pepper. Turn the heat up slightly and let the liquid in the
tomatoes boil off. It took us about 20 minutes to get it to a great
consistency. Taste it! It may need more salt. The trick is to NOT taste
it too early because so much will boil off leaving a more intense flavor
and you'll end up oversalting.

cheese :  sharp cheddar & mozzarella.

toppings : homemade meatballs cut into slices.

thoughts : this is one of our favorite pizzas because it's so easy and you can stretch one meal into two. On Monday, we made meatballs (using this recipe) for dinner to eat with pasta and tomato sauce. We made extra meatballs and extra sauce, knowing that we'd be able to but a pizza together the next night with the same ingredients. We built the pizza upside down – cheese on the bottom, meatball slices in the middle and red sauce on top. It was SO good.

    Elise, I recently purchased a 50 mm lense and it is the best thing since sliced bread. I take pictures in the evening and the pictures are wonderful. I don’t even use a facy setting, just all automatic with the flash turned off. And it was just $125! It’s a Canon 50mm EF f/1.8. I highly recommend it.

    Yum! That looks delicious. I’ve been missing your pizza posts. The sun does set way too early right now! A pause makes sense. I started a project inspired by your 40 loaves and 40 pizzas. I am doing 52 sandwiches. I am making my first one today. 🙂

    Funny thing, I read this post while eating a pita pizza (well to be specific, I was using naan bread as the base, not pita). I may have to try this pizza the next time I made meatballs! 🙂

    Elise, I want to thank you for your pizza posts! I’ve always been intimidated by making any sort of dough, but decided last night to give it a go for the first time! It was super easy to make, and turned out pretty awesome for my first attempt! We brought a tomato sauce for the base, but I’m going to attempt making one at some stage, and used olives, chicken, mushrooms and pineapple 🙂

    How perfect are you with your post timing? I made a pizza base yesterday (for the first time in YEARS) and as I was making it I was wondering if you had an awesome base recipe. I’ll try yours next time – mine had good consistency but was flavorless!
    P.S. Tried some yoga with my kids this morning using an old DVD I have. It surely added another dimension having kids jump on me in the middle of a pose! Next time I’m going to try some easier poses and act like their instructor. Already feel like it has made my day better.
