pizza no. 2 : pesto chicken.

occasion : the basil plants were due for their first major trim.

crust : our whole wheat usual.

sauce : pesto! This time around we had more than enough basil so we skipped the asparagus, but normally we follow this recipe (and love that we get extra green veggies).

cheese : jack & feta.

toppings : kalamata olives, chicken, onion.

thoughts : really fantastic. We've done this version a few times, but never using our own garden for the basil. I would recommend adding the feta for sure.

    I love your blog, and I am especially loving your “40 Pizzas” posts so far!
    I don’t know if you have a general idea of what all 40 pizzas are going to be, but I thought it’d be neat to share this link containing three different types of pizza. One can even help use up some of that basil! 🙂

    Our local Italian does a pizza alla Genovese which is similar to this and also really delicious – pesto for the sauce, really freshly made buffalo mozzarella for the cheese, with asparagus and artichokes. Fished with shavings of parmesan and a sprinkle of rocket (not sure what Americans call rocket – arugula, I think?) once it’s out of the oven. Really good.

    Sounds delicious! They make pesto pizza in our dining hall, but it doesn’t look nearly as nice as yours. haha

    the 40 pizza posts are a great idea! we started a weekly homemade pizza night back in the winter, but recently got out of the habit. that whole wheat dough recipe might be enough incentive to start again!

    I made almost this exact pizza tonight before I read your blog! It was amazing. I omitted the Jack and use fresh grated Parmesan. Too bad my basil plants are only an inch high!
