New40loaves

Bread no. 40 : french bread recipe below.
 

Adjustments : I halved this to make just one loaf and then my changes are shown below in italics. Thanks so much Jill for sending the recipe!

Notes : it's like the end of an era. 

Review : good. Probably could have used a bit more salt. The wheat switch might have de-flavored it a bit. Perfect with a bit of butter though.

2 tbsp. oil
2 tbsp. sugar
1 tbsp. salt
1 c. warm water
1 c. cold water (I skipped the cold water portion and went with all warm)
1pkg yeast
6 c. sifted flour (as mentioned, I halved this recipe and used 2.5C white flour and .5C wheat)
1 egg white.

Combine oil, sugar, salt, cold water. Combine yeast & warm water in small bowl. (I stuck the sugar in with the yeast and water) Add to 1st mixture beating vigorously. Beat in flour. Knead. Cover w/ cloth and let stand 1 – 1/2 hrs until double in size. Press down and let stand 15 minutes. Then divide in two, shape into tapered loaves, and put on two greased (large) cookie sheets. Let sit another hour until double. Beat egg white and brush on top of loaves then slice tops with 1" long slits every 2 inches.  Bake @ 350 for 45-50 minutes. (Mine only needed to bake for about 37 minutes.)

    Congrats! Makes me hungry for that bread but I don’t have a lot of self-control (and I don’t run :). Have always wanted to try it w/ whole wheat. Is it honestly a repeater? Just curious.

    it was good! when we want french bread, I would make it. But usually I want something with more wheat and this was not the best for making adjustments and keeping flavor. I will be sharing some of my favorites next week. 🙂

    I have really been motivated by your “change” of pace for this project. I tend to be way overboard and then just give up — but now I’m working on shifting real “past” goals to the present time … and I started running!! Not that it has anything to do with bread … well it does. Two year ago, my sister and I were training for a 5k when she suddenly became ill and was unable to walk or anything for over 16 weeks. That bedrest time put everything on the backburner. But I just decided, “Who cares if I didn’t run it THEN … I’ll run it NOW!!” 3.1 miles WILL BE RUN!! LOL!!

    Congrats! That’s awesome. I’ve never made 1 loaf before 🙂 I do want to try planting some herbs though. I tried basil last year but it started getting holes in the leaves. I guess bugs? I’m doing a 52 week project with 1 paintings, 1 sketch + 1 art journal page a week. It’s so tough + I’m only on week 18, haha.

    Looks great. I have realized this too, if you replace some of the white flour with whole wheat then you sometimes need to up the salt. How great though that you’re finally done with 40 loaves, quite the nice repertoire of different breads!
