Bread no. 20 : whole wheat bread from Peter Reinhart's Artisan Breads Every Day

Adjustments : halved the recipe.

Notes : this was supposed to be cooked in a hearth oven with steam. I was a bit too lazy for that but did cook it on a pizza stone.

Review : I am on a mission to find the perfect everday wheat bread. This is not quite it. It was a little too dense and needed a bit more flavor (maybe extra salt?). Still very enjoyable – but not the winner. I'd love links to your favorite recipes for everday bread!

    This is a recipe that I’ve heard many people use as everyday bread. (I have not, personally). After you read the recipe, the rest of the site is worth perusing for sure!

    So glad to find your site from Kaileen Elise! Gosh, it’s so great to stumble upon another San Diego blogger. I love what you’re doing here, and your Etsy shop is fantastic. Wish I had a need for a guest book right now, but I could try and find a reason. As for everyday bread, I’m a big fan of the fig and anise seed bread from Bread and Cie, but I find it too dry (they use cornmeal) I made my own version here: http://www.happyolks.com/fig-and-anise-seed-bread/– hope this helps 🙂

    If I ever move to my dream farm house outside of Paris (which is actually a possibility early next year) I will try to make my own bread. I go on kicks like a month on, 5 months off, haha… something like that. But, hey, its still something I’d like to be good at. I tried this recipe http://www.progressivepioneer.com/progressive-pioneer/2010/03/no-fail-whole-wheat-bread-its-not-dense.html on one of my good spells and it was simple, and very tasty and moist. Its my go-to wheat recipe. I see you have a few others to try above, let us know if you do a taste test of them all. (you’d probably want to have a sandwich party if you try them all in one day. hehe.) Enjoy!

    This is a recipe from PR’s whole grain book and I lurve it. We used to have his light wheat bread all the time and it’s delicious, but I prefer 100% whole grain and this is soft without being TOO soft, and wheaty without being dense. http://littlebluehen.com/?p=950

    its also Peter Reinhart, but I think its lighter. Not sure if you used the light version or not…
