Spent the majority of Saturday baking. Those little balls are Mexican Wedding Cookies. The frosted mis-shapen guys are the greatest cookie known to man: Peppermint Cookies. I am not positive, but I think Mom invented them. Or Santa himself.
The Recipe:
- 1 C. butter
- 4 C. flour
- 1 1/2 C. sugar
- 1 tsp, soda
- 2 eggs
- 1 C. crushed peppermint candy (candy canes work great)
- 1 tsp. vanilla
- 4 T. oil
- 1 tsp. salt
Blend
butter, sugar, eggs, vanilla and salt; add flour and soda. Then add
crushed candy and oil. Place on greased cookie sheets. Bake at 350
degrees for 10 to 15 minutes. Frost cooled cookies with butter cream frosting (mixed with red food coloring) and sprinkle with peppermint candy dust.
Sunday night, Paul and I packed up the cookies and went over to Wes + Natalie’s for cookies and wine. I had forgotten how much I love cookies and wine. And how much I LOVE spending time with people and talking. It also reminded me to buy 700 candles because their apartment looked fantastic. Thank you guys, for having us over.
