Img_7231Spent the majority of Saturday baking.  Those little balls are Mexican Wedding Cookies. The frosted mis-shapen guys are the greatest cookie known to man: Peppermint Cookies. I am not positive, but I think Mom invented them. Or Santa himself.

The Recipe:

  • 1 C. butter                  
  • 4 C. flour
  • 1 1/2 C. sugar             
  • 1 tsp, soda
  • 2 eggs                        
  • 1 C. crushed peppermint candy (candy canes work great)
  • 1 tsp. vanilla                
  • 4 T. oil
  • 1 tsp. salt   

Blend
butter, sugar, eggs, vanilla and salt; add flour and soda. Then add
crushed candy and oil. Place on greased cookie sheets. Bake at 350
degrees for 10 to 15 minutes. Frost cooled cookies with butter cream frosting (mixed with red food coloring) and sprinkle with peppermint candy dust.

Volia! Delight! (aaaaaaand, I am just going to put this out there…these cookies taste JUST AS DELICIOUS with egg beaters, Splenda and butter substitute. And knowing that they are filled with "better" stuff might help you eat more.)

Sunday night, Paul and I packed up the cookies and went over to Wes + Natalie’s for cookies and wine. I had forgotten how much I love cookies and wine. And how much I LOVE spending time with people and talking. It also reminded me to buy 700 candles because their apartment looked fantastic. Thank you guys, for having us over.

    Hello! You don’t know me but I stumbled across your crafty little blog a while back and visit it from time to time to see what new crafty little things you’ve come up with. Not in a stalker-y way though, no worries. Anyhow, I love peppermint anything so I’ve been excited to try out this recipe! I made them for a little get together I had this afternoon with a cream-cheese-royal-icing-hybrid that I make( and all my friends love) and they were a HIT! I can’t wait to make them for my family. They are perfect to have with coffee or wine or really anything.
