pizza no. 12 : pepperoni & green olives.

occasion : we don't have much in our fridge.

crust : our whole wheat usual. (truly folks, I'll be changing this up! But the best part of this pizza is the sauce!)

sauce : red tomato sauce of Paul's concoction :

  • olive oil
  • 1 large garlic clove – minced
  • 28 oz can of whole peeled plum tomatoes
  • pinch of dried rosemary, basil and oregano
  • salt & pepper to taste

Saute the minced garlic in olive oil over medium heat. Add the tomatoes (crush them up with a wooden spoon), dried herbs and a bit of salt and pepper. Turn the heat up slightly and let the liquid in the tomatoes boil off. It took us about 20 minutes to get it to a great consistency. Taste it! It may need more salt. The trick is to NOT taste it too early because so much will boil off leaving a more intense flavor and you'll end up oversalting.

cheese :  sharp cheddar.

toppings : turkey pepperoni and green olives also known as all we had in the fridge.

thoughts : this was amazing. Much more amazing than it should have been. And here's the secret – we built it upside down…cheese first, then toppings and sauce dribbled on top. I had no idea this would taste that different, but Paul seemed convinced all along that sauce on top would result in magic. He was right.

    This looks absolutely delicious. I am such a pizza lover – though it is basically out of my life now due to my no-gluten, no-dairy lifestyle. I grew up eating homemade Italian food and this is bringing me back. I think sometimes the sauce gets lost when it’s underneath, so I wholeheartedly agree with that decision. Gosh, I feel like I’m getting philosophical about pizza. Love this line: “toppings : turkey pepperoni and green olives also known as all we had in the fridge.” You certainly made good with it.

    First of all, as crazy as this sounds, you have inspired my hubby and I and now we have pizza night every Wednesday! Our friends are fighting over who gets invited over each week!! LOL. My ? is this–does that make sauce for just one pizza? So should I make 4 times the amount for 4 pizzas? Can’t wait to try it!!

    This is pretty much what we made last night for dinner 🙂 Except we used mozzarella and herb goat cheese instead of sharp chedder (and we bought the crust). I’ll have to try sauce on top sometime.

    I love upside down pizzas – this one sounds delicious! I made one a few weeks ago that started with a garlicky cheese sauce as the base, and then added a beef-studded tomato sauce and bacon. My mouth is watering just thinking of it again.

    I have a pizza suggestion for you. We make some made pizzas at our house with a homemade pizza dough from Mario Batalli and a sauce that’s adapted from Pioneer Woman. Our latest fav combo is pear, goat cheese and cartelized onions.

    This sounds awesome! Me and my partner having been making homemade pizza a lot more recently, although we don’t make the pizza bases. My favourite is BBQ chicken and mushroom. I need to try the homemade sauce and upside down pizza!

    That’ show Chicago-style pizza is made. Cheese in the deep crust, a nice thick layer, then toppings, and sauce on top. It’s good that way!

    we are eating pizzas! But old recipes nothing new and the dark nights make it impossible to photo. Hoping to get back at it this spring and summer when the days are longer. 🙂
