pizza no. 7 : sun dried tomato pesto.

occasion : it's Saturday!

crust : our whole wheat usual + a bit extra yeast!

sauce : we adapted a recipe from Animal, Vegetable, Miracle by Barbara Kingsolver. It's below :

  • 1/2 C sun dried tomatoes packed in olive oil
  • glove of fresh garlic
  • handful of fresh basil (about 12 leaves)
  • 1/4 C Parmesan cheese
  • 1/4 C almonds
  • salt & pepper to taste
  • grind all that up in your food processor. It will not be liquid-y but it will be spreadable. Taste it! Does it need more salt? Do you want to just eat it right now? Excellent! It's ready.

cheese : fresh mozzarella.

toppings : grilled chicken, sliced onion & kalamata olives.

thoughts : this pizza was awesome. We're obsessed with that sauce recipe. I told Paul you could just set out a bowl of it with crackers at a party. Paul said, "like bruschetta?" and I said, "no, like a dip." It's fantastic! Just keep an eye on your oven… ours overcooked and burned a bit, but was still amazing.

    We had a chicken pizza for dinner last night! We had leftover chicken and it was a great way to use it up.
    Have you ever tried potatoes on your pizza? I microwaved a bunch of baby red potatoes, let them cool, then sliced them up. I cripsed them up in a pan with some salt, pepper and herbes de provence and then put them on the pizza with the chicken. It turned out really well.

    the post I link to with the crust recipe does (http://eliseblaha.typepad.com/golden/2010/08/pesto-pizza.html) read through it to the bottom. But really, it will depend a lot on your oven. Our electric oven took about 25 minutes. Our current gas oven takes closer to 15 minutes. I recommend checking it after 15 to see how the crust and cheese looks. All the cheese should be melted and crust should be hard to the touch. It takes some trial and error to find what works with your oven. Hope that helps.

    Whenever I use fresh mozzarella on pizza it always gets kind of watery… Do you dry/drain yours completely before you put it on your pizza? I always wanna try again because we love fresh mozzarella but it always just makes the crust soggy… Any advice?

    great question. the fresh stuff we usually buy is not packed in water (so I wonder if that means it is not quite as fresh?) so we do not usually have this problem. I would recommend using less. Whenever we use fresh we spread the pieces of cheese out quite a bit and the cheese still melts to cover the whole pie. You could definitely try drying it a bit between a cloth napkin or clean dishtowel too. I hope that helps a bit!! 🙂

    I finally got around to trying out your pizza dough and it turned out awesome. I topped it with sauteed onions,mushrooms, black olives, and turkey bacon (so yummy!). I’m going to try this pesto sauce next time!

    That looks delicious!
    We recently had “leftover” pizza with feta-dip that needed to be used before it got bad. It turned out to be perfect and we already did it again!
    We spread the feta dip on the crust as sauce:
    1/2 pound feta, ca. 150g tomato purée and whichever herbs you like blended together.
    Because that was quite salty and more crumbly than creamy I spread creme fraiche on top (one can, ca. 200g)
    and then placed the vegetables on top.
    My boyfriend had his with extra cheese on top, but I liked it like that.
    Sorry if I confused you with the metric system, but I think it’s brilliant.^^

    I made this pizza last night and it was fabulous! I can’t get over how flavorful it was. My only complaint (and it’s teeny tiny) is that it was a little bit dry, but that may have been the store bought crust I used. Anyway, it was super good and I can’t wait to eat the left overs tonight!
