pizza no. 1 : thai chicken.

occasion : it's Friday night.

crust : our whole wheat usual.

sauce : peanut sauce of Paul's concoction (all measurements are approximate)

  • 1/4 C peanut butter
  • juice of half a lime
  • 1 tbsp rice wine vinegar (or similar)
  • 2 tbsp canola oil
  • 1-2 tbsp honey (we use natural peanut butter with no sugar so we probably used more honey than you'd need with skippy)
  • 2 tbsp soy sauce
  • 2 teaspoons minced ginger
  • a couple shakes of cayenne pepper
  • salt & pepper to taste.
  • if consistency isn't quite right, add a bit of water (1-2 tbsps).

cheese : cheddar.

toppings : carrots, chicken, onion.

thoughts : good, but we have and we can do much better.

ps : thanks so much for your excitement over this new project! We are so excited to think outside the box on this one and will be grilling crust, experimenting with deep dish and trying all sort of sweet & savory options. Hoping to finish this challenge before Paul deploys again next spring.

    I Love this idea. Pizza is my favorite. I’m not much of a bread person, but I’m so excited to find new pizza recipes! This sounds so yummy! I’m a big fan of a Thai pizza a restaurant here serves. But it has broccoli and sesame seeds and tons of other veggies i would never put on a pizza. So I’m excited to find more goodies that are just as pizza worthy!

    mmmm… reminds me of our favorite! Apple butter as the sauce topped with blackened chicken, caramelized onions and cheddar cheese, it takes a bit of prep, but is so worth it!!

    Love this pizza idea! I had a pizza party last weekend and we grilled all our pizzas… it was our first time and it was super easy and really delicious. My favorite pizza toppings for something a little different are : proscuitto, figs and arugula & shaved asparagus, mushrooms and goat cheese. Have fun!

    you should try subbing a third of a cup of coconut milk (or however much to taste) for your honey. It’s quite delicious! This is a cool project, I love pizza! (who doesn’t?! =)

    THis is awesome! We do the same, but usually grill them..love the additional layer of flavor of the grill. I have a yummy recipe…different ingredients all together and my kids even love it. I bring it to parties and get rave reviews!

    oh yes, you are trouble Elise. This new 40 pizza project is going to be exciting to read but I’ll just make sure I have worked out each time I want to recreate one of your yummy creations! I will head to the store for more gluten free pizza dough mix straight away! 😛

    As soon as I saw this post yesterday, I immediately sent the link to my husband, and we made a version (using my standard no-rise necessary homemade pizza crust) for supper tonight. YUM and double YUM. If this is “good, but we have and we can do much better”– man oh man, I can’t wait for the rest of them!
    just FYI, here is way I adjusted the sauce recipe for the ingredients I had on hand:
    ~1/4 c. JIF peanut butter
    1 Tbsp lemon juice (I didn’t have any lime)
    1 Tbsp rice wine vinegar
    2 Tbsp canola oil
    2 Tbsp soy sauce (regular… in the future, I might try to use low sodium)
    1/2 tsp. ground ginger
    1.5 tsp. honey (I like my sauces sweet!)
    splash of hot sauce.
    We sauteed our onions first, too. Oh boy, oh boy. SO SO GOOD.

    You had me at peanut butter! Just made this for dinner and it was soooo tasty! I have decided to try and keep up with your 40 pizzas challenge, the fiance is very excited. Can’t wait to see what else you have in store!
