New40loaves

Bread no. 35 : honey cornbread muffins.

Adjustments : I cut a bit of sugar – used a little less than 1/3 C instead of 1/2 C.

Notes : easy as pie. Which is good because I am anxious to wrap this project up and unveil my new cooking adventure. Five "loaves" to go!

Review : the batter was fantastic. We both would have just ate that instead. Cooked up, they were still pretty good and got even better the second and third day.

    Good idea to cut the sugar! I’m amazed at how much extra sugar comes with certain recipes.

    Yum! If anyone wants a great vegan version, these are my absolute favorite corn muffins: http://www.theppk.com/2008/10/sunny-corn-muffins/ (I skip the lemon zest and sub maple syrup for the soy yogurt.)
    I can’t wait to see your review of which breads from 40 loaves were your favorites!

    Sounds really good – I wanted to try out some recipes that would make for good hot-on-the-go breakfasts. Like something like this but with additional breakfasty stuff – throw it in the over on broil for like 45 seconds or something… I’m going to Frankenstein your recipe and get back to you. 🙂

    These sound delish! Living in the South has made me love cornbread, and biscuits, and gravy. My goal is to also start loving activity more so I can balance things out 🙂
    On a different topic, I keep seeing lots of thoughts on Pinterest and copyright this week. I was curious what you think? Feel free to disregard if you think it’s a total minefield, I was just curious!

    hey Ana, I think image stealing and altering is a serious web issue. That said, I think Pinterest does more good than evil and is not at the root of the problem. Right now, I am going to continue to use it and focus on always pinning the original source. I encourage people to pin photos from my blog as long as the links are correct. 🙂 hope that helps!
