Sprouts

It's my mission to eat more greens & brussels sprouts are one of my favorites.

And this is my new favorite way to prepare them :

Heat about a tablespoon of olive oil over medium heat.

As that gets warmed up, chop your sprouts. The smaller you chop them the better. I get them all into eigths unless they're tiny.

Toss the sprouts into the pan and add a bit more olive oil. Stir them up and sprinkle with pepper and garlic salt. This is an add to taste situation – I use a ton of both.

Let them cook for about 5 minutes then add broken up unseasoned pecans. I put about a handful in.

Stir the pecans with the sprouts and continue to cook for about 5 more minutes – maybe 10. I like my sprouts pretty well cooked though and usually try one to make sure they're good to go.

Right before you turn off the heat, sprinkle with a big pinch of shaved parmesan cheese.

Turn off the heat and stir in the parmesan.

Throw on a plate and enjoy!

    i am pretty sad about all the years i wasted as a kid, hating brussels sprouts. can’t get enough of them now! (though i do have to limit my intake sometimes to keep the digestion under control. hahahaha)
    have you tried oven roasting them? they get super tasty + caramelized.

    I’m jealous that you are cooking those at home. My husband gave brussels sprouts a good college try when I made them a few times last year and he just doesn’t like them. He loves other hearty greens though, so I can’t complain. I can get my fix at the work cafeteria.

    Definitely try roasting them! That’s my favorite way! Cut into quarters, add sliced shallots (short way), toss with olive oil, season with salt and pepper. Bake at 400 for 30-40 minutes. Yum! I do the same thing with cauliflower.

    Those sound delicious! My favorite way to eat them is to slice them in half and then steam them 7-10 mins. until they are fork tender, while they are steaming I add just enough butter to a pan to coat them get it nice and warm then add the sprouts to the warm pan cut side down add salt and pepper and whatever other seasoning and turn up the heat a bit they are done when the cut side becomes golden brown, oh so yummy they take on a kind of nutty favor 🙂

    YUM!! One of my favorite greens for sure. I agree with others that roasting them is amazing! Simply boiling them keeps them soft also, but you’d lose out on that brown-y goodness. I have some in the fridge…I’m going to try them on the stove tonight 🙂

    I love these roasted too! They r delish either whole roasted with thin slices of garlic, evoo, sea salt and cracked black pepper or all of those seasonings, but slice the Brussels thinly, so delish!!

    oh my gosh, these look amazing! i definitely want to try this!
    i’ve been slightly obsessed with brussels sprouts lately, too! i like to toss them in olive oil, garlic salt, pepper, and chopped shallots & roast them in a very hot oven for 20 min – so good!

    I’ve totally got to try this and get back to eating brussels sprouts! Apparently, they are popular for Thanksgiving. And everyone was into preparing them with bacon (of course!). I’m wondering what you serve them with.
    By the way, collard greens and kale are very simple to prepare by sauteing in olive oil with garlic and sprinkling with parmesan, or stir fry in oil with onions and garlic and tamari or Bragg’s Amino (soy sauce type product). The Vegetarian Times and Moosewood Low-Fat cookbooks have several simple ways to prepare your basic greens.

    This is my fave way for the sprouts – Cook 3-4 slices of bacon. Remove bacon from pan. Add in 1/2 diced onion and brown. Add a little pat of butter and then saute sprouts. Salt and pepper to taste. Crumble the 4 slices of bacon and toss all together. Delish.

    I love to grill them myself. Cut them in half, toss with olive oil, and throw on a medium heat grill until they’re a little charred on the outside!
