Bread no. 23 : parmesan zucchini bread.

Adjustments : per usual, I halved the recipe.

Notes : mine turned out a little too moist. At least, I think so. I have never had zucchini bread before and am not sure what the texture should be. I think this is because I used a little too much zucchini and it was pretty wet when it went into the mixture. It also might be that I should have cooked it longer. (I cooked it for 50 minutes and could have easily gone to 60.)

Review : so tasty though. And the olive oil made it taste a bit like focaccia bread which is never a problem.

    I grew up on zucchini bread of the sweet and spiced variety, and it comes out more moist cakey than bread… like a banana bread. And my mom told me to scoop out the center with the seeds before grating to reduce moisture. At any rate, yours looks and sounds super tasty!

    Looks so yummy! I’ll have to try it! When I make plain zucchini bread (which hasn’t been for a while!), I usually wring the water out of the zucchini using a kitchen towel. I wasn’t sure if the original recipe said to do this or not, but thought I’d share that with you. Maybe it will help lessen how moist your bread turns out?

    Hey Elise, I’ve made a few zucchini breads this summer – and my last one was the best. I “rung out” the zucchini before adding it to my batter. This made a world of difference, texture-wise and the flavour was just as good. I also made mine with olive oil. so good!
