Bread no. 19 : banana bread

Adjustments : per usual, I swapped out a cup of white flour for a cup of wheat. I also reduced the sugar by another quarter cup so just 1/2 C of brown sugar was used.

Notes : I've already done banana bread, but this loaf needed to be made as my bananas were going brown before I had a chance to eat them up. PLUS, I knew I'd be seeing the family this past weekend. Now that Paul is gone, I need "helpers" to get all this bread eaten.

Review : Really good (and my parents thought so too). I didn't think you could notice it was low-sugar, because let's get serious : it's banana bread. When is the last time you thought, "You know what would taste great on this banana? Sugar!" (Although a bit of peanut butter on a slice of this bread was AMAZING.)

    this is my favorite banana bread! i found it on allrecipes and haven’t tried another since. thanks for the adjustment suggestions- i have been wanting to try it with whole wheat but hadn’t thought of taking out some sugar.

    I love banana bread! I’m always trying new recipes for it & still searching for the “perfect” one. Lately I’ve been using one by Mark Bittman, but I’ll have to give this one a try.
    I also try to swap out 1/2 of the all purpose flour with wheat in my recipes. Lately I’ve fallen in love with using Organic White Whole Wheat… it has all of the nutrients and fiber of regular whole wheat but seems to work so much better in recipes (even chocolate chip cookies!) than regular wheat flour. You should try it out!

    Elise— this looks delicious! And, you can make a large loaf and then freeze chunks of it (I say chunks so that way you defrost what you need, not a huge loaf).

    I always get uncomfortable using a ton of sugar on already sweet foods. Pet peeve? Sugar in tomato-based pasta sauce. People, tomatoes are sweet! Why add sugar??
    Was just thinking about making some banana bread myself… thanks for the recipe and tips!

    I love, love, looooove banana bread! Sometimes I think the only reason I buy bananas is to wait for them to go brown and exclaim, “Well, now I HAVE to make banana bread! I don’t want to totally waste them”.
